- 500 g dandelion greens
- 100 g minced meat
- 100 g smoked bacon
- 100 g shallots
- 4 eggs
- 4 slices of stale white bread
- A bunch of parsley
- A bunch of arugula
- Olive oil

Why this recipe existsThis salad is perfect for spring, when we spend a lot of time outdoors and canāt think of anything better than a quick salad.
Hard-boil the eggs in salted water with a splash of vinegar.
Clean, wash, and dry the dandelion greens. Dice the shallot and bacon, then sautƩ them in olive oil until golden brown.
Remove them from the pan. In the same pan, melt the lard, add apple cider vinegar, simmer, and let cool.
Cut the bread into cubes and fry them in olive oil until golden brown. Pour the prepared vinegar marinade over the dandelion greens, arrange the poached eggs on top, and sprinkle with the fried shallots and bacon, as well as the toasted bread cubes. Garnish with chopped parsley and chopped arugula.
