- 500 g butter
- 100 g shallots
- 50 g garlic
- Olive oil
- Thyme
- Stock or cognac (to taste)

Sauté the chopped shallots and garlic in a tablespoon of olive oil. Sauté until softened, then add thyme and remove from heat.
In another pan, trim the livers of all veins and fat.
Sauté them until they are still pink, then add salt and pepper. Just before finishing, pour in the brandy. Let the alcohol evaporate. Mix in the shallot mixture you prepared earlier. Blend everything together with cold butter.
Transfer to a bowl and chill immediately.
Spread the pâté on bread.
