- 120g regular animal fat or regular butter, as desired
- 6 egg yolks
- 100g sugar
- 220g local honey
- Lemon zest
- Cinnamon
- Cloves
- Teaspoon of baking soda soaked in a little rum
- 6 egg whites
- 200g flour

Why this recipe existsOur grandmother used to make this recipe every winter.
Cream together the butter, egg yolks, sugar, honey, lemon zest, cinnamon, and cloves. Then add the baking soda, which has been dissolved in rum, add the stiff egg whites, and gently fold in the flour.
First, grease a long baking pan and sprinkle with flour, shaking off any excess. The mixture will stick to the pan. Then pour the mixture into the pan and bake at 180°C for one hour. Leave the baked bread in the pan for about 25 minutes, then turn it out onto a board.
