- 2 whole eggs
- 200 g plain flour
- 200 ml lukewarm milk
- 200 ml sparkling mineral water
- 1 tablespoon oil
- 1 tablespoon melted butter
- a pinch of salt

1 Whisk the eggs, add half of the milk and flour, and mix everything together until smooth. Then add the other half of the milk, mineral water, oil, butter, and salt, and, gradually adding flour, whisk into a smooth, lump-free batter. Let it rest for about 20 minutes so that any remaining flour can dissolve.
2 Grease the pancake pan with a few drops of oil (I use a silicone cake brush) and heat it well. Repeat this every time before pouring the batter into the pan.
3 Pour a ladleful of the mixture into the pan and spread it evenly. Cook briefly, a minute or two, then flip it over and cook until golden brown.
4 Stack the pancakes on a plate, one on top of the other, and once you’ve cooked the last one, cover them with an inverted plate.
