- 4 tablespoons pumpkin seed oil
- 4 pinches of salt
- A tablespoon of balsamic vinegar
- 5 dried tomatoes
- For breading:
- 5 tablespoons flour
- 1 egg
- 1 dl water
- 4 handfuls breadcrumbs

Why this recipe existsWhen you want some great food, this combination is what you make.
Make a pancake batter from eggs, water, salt, and flour.
Prepare the filling: wash and chop the spinach leaves. Sauté them in 2 tablespoons of oil until the leaves wilt. Season with 1/2 teaspoon of salt, add 2 small pinches of pepper, stir in the cottage cheese and eggs, and mix until thickened. Then add a handful of breadcrumbs. Fry 8 pancakes in hot oil and fill them with the filling.
Coat them in flour, eggs breadcrumbs, and fry them in oil. Serve with salad.
Salad#From the board#:
Cut the tomatoes in half and dice them into small cubes. Chop the dried tomatoes and sprinkle them over the fresh tomatoes. Drizzle with pumpkin seed oil and balsamic vinegar, season with salt and stir.
